Does anyone know of any late summer/early fall tournaments that have a division for '08 teams?

If you mean 3v3, then I would look for quickfoot tourneys.
 
If you mean 7v7, you might have to wait a while.  The first non rec '07 tourney I believe was Primetime in Feb this year.  The prior tourney's didn't make for the U6 division.  If like last year, U6 teams are few and far between  at this point and just starting to form.  Any tourney that is NTSSA sanctioned will nothave an academy '08 division for a year.  Primetime is about it.
 
If your team was born from a rec team, then there might be a rec tourney but still few and far between.
 
U6 is a tough year as there are few teams and your not officially academy until U7.
